I tried out this soup recipe today courtesy my good friend and its so yummy and healthy that its a meal by itself! Heres what you will need! You can add any vegetables of your choice and even chicken (I didn't have any so made do with the veggies). Heres what you will need:
For the soup:
For the seasoning:
Fry the chopped onions in a little oil. Add the pasta and tomato puree and cook for a couple of minutes. Now add all the veggies and pour in as much water as you like as this will determine the amount of soup you actually dish out! Add the seasoning and bring to boil or until all the veggies and pasta are cooked!
This recipe is definitely for keeps and will be a regular feature in my menu :)
